2 lemons
4 cloves of garlic
Fresh herbs (such as parsley, dill, thyme)

2 zucchinis
2 red bell peppers
1 eggplant
200 grams of couscous
400 ml vegetable broth

Instructions
1Preheat the oven to 200 degrees.
2Rub the fish with olive oil, salt, pepper, and finely chopped herbs. Place a slice of lemon and a clove of garlic on each fish. Place the fish in a baking dish and set aside.
3Cut the vegetables into cubes and spread them on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Roast the vegetables in the oven for 20 minutes.
