3 large fresh lemons
4 egg whites
100 g fine granulated sugar
200 ml whipping cream
200 g fresh raspberries
2 tablespoons honey

Instructions
1Grate the zest of the lemons and squeeze out the juice.
2Beat the egg whites stiff in a large bowl. Gradually add the sugar and continue beating until the egg white is glossy.
3In another bowl, whip the cream to soft peaks.
4Add the lemon zest and juice to the whipped cream and mix well.
5Gently fold the egg whites into the whipped cream mixture, making sure to keep it light.
6Divide the mousse into 4 glasses and refrigerate for at least 2 hours to set.
7For the sauce, puree the raspberries with the honey in a blender until smooth.
8Serve the mousse with the raspberry sauce on top.
