Ingredients

  • large fresh lemons
  • egg whites
  • 100 g fine granulated sugar
  • 200 ml whipping cream
  • 200 g fresh raspberries
  • tablespoons honey

Instructions

  1. 1 Grate the zest of the lemons and squeeze out the juice.
  2. 2 Beat the egg whites stiff in a large bowl. Gradually add the sugar and continue beating until the egg white is glossy.
  3. 3 In another bowl, whip the cream to soft peaks.
  4. 4 Add the lemon zest and juice to the whipped cream and mix well.
  5. 5 Gently fold the egg whites into the whipped cream mixture, making sure to keep it light.
