Fresh Lemon Quark Tart with Red Berries

Ingredients

  • 200 g Digestive biscuits
  • 100 g unsalted butter, melted
  • 500 g low-fat quark
  • 200 ml whipped cream
  • 100 g sugar
  • gelatin leaves
  • lemons, juice and zest
  • 200 g red berries (raspberries, strawberries, blackberries)

Instructions

  1. 1 Crush the Digestive biscuits in a food processor.
  2. 2 Mix the biscuit crumbs with the melted butter and press this mixture into the base of a springform pan.
  3. 3 Soak the gelatin leaves in cold water.
  4. 4 Whip the cream with the sugar until stiff peaks form.
  5. 5 Mix the quark and lemon juice and zest into the whipped cream.
  6. 6 Squeeze out the gelatin leaves and dissolve them in a little hot water. Quickly mix this into the quark mixture.
  7. 7 Spread the quark mixture over the biscuit base in the springform pan and smooth the top.
  8. 8 Chill the tart in the refrigerator for at least 4 hours.
  9. 9 Decorate the tart with the red berries just before serving.
