200 g Digestive biscuits
100 g unsalted butter, melted
500 g low-fat quark
200 ml whipped cream
100 g sugar
4 gelatin leaves
2 lemons, juice and zest
200 g red berries (raspberries, strawberries, blackberries)

Instructions
1Crush the Digestive biscuits in a food processor.
2Mix the biscuit crumbs with the melted butter and press this mixture into the base of a springform pan.
3Soak the gelatin leaves in cold water.
4Whip the cream with the sugar until stiff peaks form.
5Mix the quark and lemon juice and zest into the whipped cream.
6Squeeze out the gelatin leaves and dissolve them in a little hot water. Quickly mix this into the quark mixture.
7Spread the quark mixture over the biscuit base in the springform pan and smooth the top.
8Chill the tart in the refrigerator for at least 4 hours.
9Decorate the tart with the red berries just before serving.
