handful of fresh cilantro
handful of fresh mint
juice of 1 lime

Instructions
1Cook the quinoa according to the instructions on the package and let it cool.
2Grill the chicken breasts in a grill pan or on the barbecue until cooked through. Let them rest before cutting them into pieces.
3Meanwhile, dice the mango, red bell pepper, and cucumber into small cubes.
4For the dressing, mix the lime juice, olive oil, and salt and pepper to taste.
5Mix the cooled quinoa with the mango, bell pepper, cucumber, chicken, and dressing. Add the fresh herbs and toss everything together well.
