  • 200 grams quinoa
  • chicken breasts
  • ripe mango
  • red bell pepper
  • cucumber
  •  handful of fresh cilantro
  •  handful of fresh mint
  •  juice of 1 lime
  • tablespoons olive oil
  •  salt and pepper to taste

Instructions

  1. 1 Cook the quinoa according to the instructions on the package and let it cool.
  2. 2 Grill the chicken breasts in a grill pan or on the barbecue until cooked through. Let them rest before cutting them into pieces.
