  • 200 grams quinoa
  • zucchini
  • red bell pepper
  • eggplant
  • 200 grams feta cheese
  •  olive oil
  •  salt and pepper
  •  handful of fresh basil

Instructions

  1. 1 Preheat the oven to 200 degrees and line a baking sheet with parchment paper.
  2. 2 Cut the zucchini, bell pepper, and eggplant into pieces and place them on the baking sheet. Drizzle with olive oil and season with salt and pepper. Roast the vegetables for 20 minutes in the preheated oven. Turn them halfway through.
  3. 3 Meanwhile, cook the quinoa according to the package instructions. Let it cool slightly.
