Ingredients

  • salmon fillets
  • large sweet potatoes
  • bunches of green asparagus
  • tablespoons of olive oil
  •  Salt and pepper to taste
  • cloves of garlic
  • lemon

Instructions

  1. 1 Preheat the oven to 200 degrees.
  2. 2 Peel and dice the sweet potatoes. Cook them in a pan of water until soft.
  3. 3 While the sweet potatoes are cooking, place the salmon fillets on a baking sheet, drizzle with 1 tablespoon of olive oil and season with salt and pepper.
  4. 4 Place the salmon in the preheated oven and bake for 12-15 minutes until cooked through.
  5. 5 Trim the bottoms of the asparagus and cook them in a pan of water until tender-crisp.
  6. 6 Drain the sweet potatoes and asparagus. Mash the sweet potatoes with a fork.
  7. 7 Serve the grilled salmon on a bed of sweet potato puree and place the green asparagus alongside. Drizzle with the remaining olive oil and serve with a lemon wedge. Enjoy!
