Grilled Salmon with Sweet Potato Puree and Green Asparagus

4 salmon fillets
4 large sweet potatoes
2 bunches of green asparagus
2 tablespoons of olive oil
Salt and pepper to taste
2 cloves of garlic
1 lemon

Instructions
1Preheat the oven to 200 degrees.
2Peel and dice the sweet potatoes. Cook them in a pan of water until soft.
3While the sweet potatoes are cooking, place the salmon fillets on a baking sheet, drizzle with 1 tablespoon of olive oil and season with salt and pepper.
4Place the salmon in the preheated oven and bake for 12-15 minutes until cooked through.
5Trim the bottoms of the asparagus and cook them in a pan of water until tender-crisp.
6Drain the sweet potatoes and asparagus. Mash the sweet potatoes with a fork.
7Serve the grilled salmon on a bed of sweet potato puree and place the green asparagus alongside. Drizzle with the remaining olive oil and serve with a lemon wedge. Enjoy!
