Ingredients

  • tbsp olive oil
  • large onion, finely chopped
  • cloves of garlic, pressed
  • tbsp grated fresh ginger
  • tsp cumin seeds
  • tsp turmeric
  • 250 g red lentils
  • can of chopped tomatoes (400 g)
  • liter vegetable broth
  • sprigs of fresh coriander, finely chopped
  • naan breads

Instructions

  1. 1 Heat the olive oil in a large pan and sauté the onion, garlic, and ginger.
  2. 2 Add the cumin seeds and turmeric and cook for another 2 minutes.
  3. 3 Rinse the lentils under cold water and add them to the pan. Stir well.
  4. 4 Add the chopped tomatoes and vegetable broth. Bring to a boil and let simmer gently for 30 minutes, until the lentils are soft.
  5. 5 Stir in the finely chopped coriander.
  6. 6 Heat the naan breads according to the instructions on the package. Serve the lentil stew with the warm naan bread.
