Ingredients

  • 200 grams oats
  • 100 grams almond flour
  • tablespoons chia seeds
  • tablespoons honey
  • tablespoons coconut oil
  • 200 grams fresh blueberries
  • teaspoon vanilla extract
  •  Optional: Greek yogurt and fresh mint for garnish

Instructions

  1. 1 Preheat the oven to 180 degrees Celsius.
  2. 2 In a bowl, mix the oats, almond flour, chia seeds, honey, and coconut oil. Knead into a firm dough.
  3. 3 Line a baking tin with the dough and bake in the oven for 10 minutes.
  4. 4 Meanwhile, blend the blueberries into a puree and add the vanilla extract.
  5. 5 Remove the baking tin from the oven and pour the blueberry puree over the crust.
  6. 6 Bake the tart for another 15 minutes in the oven.
  7. 7 Allow the tart to cool before serving. Optional: serve with a dollop of Greek yogurt and some fresh mint.
