100 grams almond flour
3 tablespoons chia seeds
2 tablespoons honey
4 tablespoons coconut oil
200 grams fresh blueberries
1 teaspoon vanilla extract
Optional: Greek yogurt and fresh mint for garnish

Instructions
1Preheat the oven to 180 degrees Celsius.
2In a bowl, mix the oats, almond flour, chia seeds, honey, and coconut oil. Knead into a firm dough.
3Line a baking tin with the dough and bake in the oven for 10 minutes.
4Meanwhile, blend the blueberries into a puree and add the vanilla extract.
5Remove the baking tin from the oven and pour the blueberry puree over the crust.
6Bake the tart for another 15 minutes in the oven.
7Allow the tart to cool before serving. Optional: serve with a dollop of Greek yogurt and some fresh mint.
