Ingredients
2 tablespoons olive oil
1 onion, chopped
2 cloves of garlic, minced
2 stalks of celery, thinly sliced
2 carrots, thinly sliced
1 zucchini, diced
2 potatoes, diced
1 can of diced tomatoes (400g)
1.5 liters of vegetable broth
1 can of cannellini beans, rinsed and drained (400g)
100 grams of fresh spinach
4 slices of whole grain bread
Salt and pepper to taste
Grated Parmesan cheese for topping (optional)

Instructions
1Heat the olive oil in a large soup pot over medium-high heat.
2Add the onion and garlic and cook until soft and translucent.
3Add the celery, carrots, zucchini, and potatoes. Cook for 5 minutes.
4Add the diced tomatoes and vegetable broth. Bring to a boil.
5Let it simmer for 15 minutes.
6Add the cannellini beans and spinach. Let it simmer for another 5 minutes.
7Season with salt and pepper.
8Serve the soup with a slice of whole grain bread and sprinkle with some Parmesan cheese, if desired. Enjoy!
