Ingredients

  • tablespoons olive oil
  • onion, chopped
  • cloves of garlic, minced
  • stalks of celery, thinly sliced
  • carrots, thinly sliced
  • zucchini, diced
  • potatoes, diced
  • can of diced tomatoes (400g)
  • 1.5 liters of vegetable broth
  • can of cannellini beans, rinsed and drained (400g)
  • 100 grams of fresh spinach
  • slices of whole grain bread
  •  Salt and pepper to taste
  •  Grated Parmesan cheese for topping (optional)

Instructions

  1. 1 Heat the olive oil in a large soup pot over medium-high heat.
  2. 2 Add the onion and garlic and cook until soft and translucent.
  3. 3 Add the celery, carrots, zucchini, and potatoes. Cook for 5 minutes.
  4. 4 Add the diced tomatoes and vegetable broth. Bring to a boil.
  5. 5 Let it simmer for 15 minutes.
  6. 6 Add the cannellini beans and spinach. Let it simmer for another 5 minutes.
  7. 7 Season with salt and pepper.
