300 grams risotto rice
1 liter vegetable broth
2 tablespoons olive oil
1 onion, finely chopped
2 cloves of garlic, finely chopped
200 grams mixed mushrooms
50 grams fresh Parmesan cheese, grated
2 tablespoons fresh parsley, finely chopped
Salt and pepper to taste
2 teaspoons truffle oil
Grated truffle to taste

Instructions
1Heat the olive oil in a large pan over medium-high heat. Add the onion and garlic and sauté until soft.
2Add the risotto rice and sauté for a few minutes until the grains are translucent.
