2 tablespoons olive oil
1 onion, finely chopped
2 cloves of garlic, finely chopped
1 large sweet potato, diced
1 teaspoon cumin
1 teaspoon coriander
1 teaspoon paprika
400 grams lentils (canned or cooked)
400 grams diced tomatoes (canned)
700 ml vegetable broth
200 grams fresh spinach
Salt and pepper to taste

Instructions
1Heat the olive oil in a large pan over medium heat.
