Healthy Oatmeal Cookies with Cranberries and Nuts

These deliciously crunchy and nutritious cookies are a perfect snack for any time of the day. They are made from whole grain oats, sweet dried fruit, and savory nuts. Plus, they are super easy to make. No stress, you can do this too!

Ingredients

  • 200 g whole grain oats
  • 100 g unsalted mixed nuts
  • 70 g dried cranberries
  • ripe bananas
  • tablespoons honey
  • teaspoon vanilla extract
  •  Pinch of salt

Instructions

  1. 1 Preheat the oven to 180 degrees and line a baking sheet with parchment paper.
  2. 2 Roughly chop the nuts and place them in a large bowl.
  3. 3 Add the oats, cranberries, and a pinch of salt.
  4. 4 Mash the bananas and add them to the bowl with the honey and vanilla extract. Mix everything together until a sticky dough forms.
  5. 5 Shape cookies from the dough with your hands and place them on the baking sheet. Leave some space between the cookies, as they will spread a bit.
  6. 6 Bake the cookies for 15-20 minutes until golden brown and crispy. Then let them cool completely on a rack. They will get even crunchier as they cool!
