200 g whole grain oats
100 g unsalted mixed nuts
70 g dried cranberries
2 ripe bananas
2 tablespoons honey
1 teaspoon vanilla extract
Pinch of salt

Instructions
1Preheat the oven to 180 degrees and line a baking sheet with parchment paper.
2Roughly chop the nuts and place them in a large bowl.
3Add the oats, cranberries, and a pinch of salt.
4Mash the bananas and add them to the bowl with the honey and vanilla extract. Mix everything together until a sticky dough forms.
5Shape cookies from the dough with your hands and place them on the baking sheet. Leave some space between the cookies, as they will spread a bit.
6Bake the cookies for 15-20 minutes until golden brown and crispy. Then let them cool completely on a rack. They will get even crunchier as they cool!
