200 g quinoa
1 red bell pepper, diced
1 cucumber, diced
200 g cherry tomatoes, halved
100 g feta cheese, crumbled
For the honey mustard sauce:
1 tablespoon Dijon mustard
2 tablespoons honey
2 tablespoons apple cider vinegar
4 tablespoons olive oil
salt and pepper to taste

Instructions
1Cook the quinoa according to the instructions on the package and let it cool.
2While the quinoa is cooking, make the sauce. Mix the Dijon mustard, honey, apple cider vinegar, and olive oil in a bowl. Add salt and pepper to taste.
