4 zucchinis
2 carrots
1 red bell pepper
2 cloves of garlic
2 tablespoons of olive oil
For the pesto:
2 handfuls of fresh basil
2 cloves of garlic
50 g parmesan cheese
50 g pine nuts
100 ml olive oil
salt and pepper to taste

Instructions
1Start by making the pesto. In a food processor, combine the basil, garlic, parmesan cheese, pine nuts, and olive oil. Blend until smooth and season with salt and pepper.
2Use a spiralizer to cut the zucchinis and carrots into spaghetti. Cut the bell pepper into thin strips.
3Heat the olive oil in a large pan. Add the sliced vegetables and garlic and cook for about 5 minutes, until the vegetables are tender.
4Add the pesto to the vegetables and mix well. Let it simmer for another 2 minutes and your delicious vegetable spaghetti is ready to serve!
