  • eggs
  • 200 ml almond milk
  • teaspoon baking powder
  •  Pinch of salt
  • tablespoons honey
  •  Handful of mixed nuts (e.g. walnuts, almonds, pecans)
  •  Coconut oil for frying

Instructions

  1. 1 Mix the buckwheat flour, baking powder, and salt in a large bowl.
  2. 2 Mash the bananas in a separate bowl and add the eggs, almond milk, and honey. Mix everything well.
  3. 3 Add the banana mixture to the dry ingredients and stir until smooth batter forms.
  4. 4 Heat some coconut oil in a frying pan over medium heat.
  5. 5 Scoop a ladle of the batter into the pan and fry the pancake until golden brown on both sides.
