Ingredients

  • 200 g Farro
  • red onion
  • cloves of garlic
  • zucchini
  • red bell pepper
  • yellow bell pepper
  • 100 g cherry tomatoes
  • 75 g feta cheese
  • tbsp olive oil
  • tbsp balsamic vinegar
  •  Handful of fresh basil
  •  Salt and pepper to taste

Instructions

  1. 1 Preheat the oven to 200 degrees Celsius.
  2. 2 Cut the onion, zucchini, and bell peppers into pieces and place them on a baking sheet.
  3. 3 Add the cherry tomatoes and drizzle everything with 2 tablespoons of olive oil. Roast the vegetables in the oven for 20 minutes.
  4. 4 Meanwhile, cook the Farro according to the instructions on the package.
  5. 5 Mix the roasted vegetables with the cooked Farro in a large bowl.
  6. 6 Add the feta, balsamic vinegar, remaining olive oil, basil, salt, and pepper. Stir everything well together.
