Italian Farro Salad with Roasted Vegetables and Feta

Ingredients
200 g Farro
1 red onion
2 cloves of garlic
1 zucchini
1 red bell pepper
1 yellow bell pepper
100 g cherry tomatoes
75 g feta cheese
4 tbsp olive oil
2 tbsp balsamic vinegar
Handful of fresh basil
Salt and pepper to taste

Instructions
1Preheat the oven to 200 degrees Celsius.
2Cut the onion, zucchini, and bell peppers into pieces and place them on a baking sheet.
3Add the cherry tomatoes and drizzle everything with 2 tablespoons of olive oil. Roast the vegetables in the oven for 20 minutes.
4Meanwhile, cook the Farro according to the instructions on the package.
5Mix the roasted vegetables with the cooked Farro in a large bowl.
6Add the feta, balsamic vinegar, remaining olive oil, basil, salt, and pepper. Stir everything well together.
7Let the salad sit for a few minutes to allow the flavors to blend and enjoy!
