4 large sweet potatoes
2 tablespoons olive oil
Salt and pepper to taste
200 grams Greek yogurt
Handful of fresh mint, chopped
1 clove of garlic, minced
1 lemon

Instructions
1Preheat the oven to 200 degrees Celsius.
2Dice the sweet potatoes and place them in a bowl. Add the olive oil, salt, and pepper and mix well. Spread the potatoes on a baking sheet and roast them in the oven for 30 minutes.
3Meanwhile, make the mint yogurt sauce. Mix the Greek yogurt with the mint, garlic, and the juice of half a lemon. Chill the sauce in the refrigerator until serving.
