  • 250 grams whole wheat penne pasta
  • zucchini, sliced
  • red bell pepper, sliced
  • yellow bell pepper, sliced
  • eggplant, sliced
  • tablespoons olive oil
  • cloves garlic, minced
  • teaspoon dried oregano
  •  Salt and pepper to taste
  • 50 grams grated parmesan cheese
  •  Handful of fresh basil leaves

Instructions

  1. 1 Cook the pasta according to the instructions on the package. Drain and set aside.
  2. 2 Heat a grill pan over medium-high heat. Drizzle the sliced vegetables with olive oil and grill them until soft and lightly caramelized.
  3. 3 Add the garlic, oregano, salt, and pepper to the vegetables and stir well.
  4. 4 Add the cooked pasta to the vegetables and mix everything together well.
