Ingredients
2 tablespoons olive oil
1 onion, chopped
2 cloves of garlic, minced
2 carrots, diced
2 stalks of celery, diced
1 zucchini, diced
400 grams canned tomatoes
1 liter vegetable broth
400 grams cannellini beans, rinsed and drained
2 bay leaves
1 teaspoon dried oregano
Salt and black pepper to taste
Fresh parsley, for garnish

Instructions
1Heat the olive oil in a large pot over medium-high heat.
2Add the onion and garlic and sauté until soft.
3Add the carrots, celery, and zucchini and sauté for 5 minutes.
4Add the tomatoes, broth, beans, bay leaves, and oregano. Bring to a boil.
5Reduce heat and let the soup simmer gently for 30 minutes.
