4 chicken breasts
2 zucchinis
4 carrots
800 g tomatoes, diced
4 cloves of garlic, minced
2 onions, finely chopped
2 tbsp olive oil
Salt and pepper to taste
Handful of fresh basil, chopped

Instructions
1Heat 1 tablespoon of olive oil in a pan and add the onion and garlic. Cook until soft and fragrant.
2Add the diced tomatoes to the pan and let simmer. This is your homemade tomato sauce. Season with salt and pepper to taste.
3Use a spiralizer to turn the zucchini and carrot into 'linguine'. No stress if you don't have a spiralizer, you can also use a peeler to make long, thin strips.
4Grill the chicken breasts in a separate pan with the remaining olive oil. Season with salt and pepper to taste.
5Pour the tomato sauce over the vegetable linguine and mix well. Heat the mixture on low heat.
6Serve the vegetable linguine with a grilled chicken breast on top and sprinkle with fresh basil. Buon appetito!
