Italian Vegetable Linguine with Grilled Chicken

This light Italian meal is a true treat for any pasta lover. We replace traditional pasta with vegetable linguine, a delicious and healthy twist. Ingredients

  • chicken breasts
  • zucchinis
  • carrots
  • 800 g tomatoes, diced
  • cloves of garlic, minced
  • onions, finely chopped
  • tbsp olive oil
  •  Salt and pepper to taste
  •  Handful of fresh basil, chopped

Instructions

  1. 1 Heat 1 tablespoon of olive oil in a pan and add the onion and garlic. Cook until soft and fragrant.
  2. 2 Add the diced tomatoes to the pan and let simmer. This is your homemade tomato sauce. Season with salt and pepper to taste.
  3. 3 Use a spiralizer to turn the zucchini and carrot into 'linguine'. No stress if you don't have a spiralizer, you can also use a peeler to make long, thin strips.
  4. 4 Grill the chicken breasts in a separate pan with the remaining olive oil. Season with salt and pepper to taste.
  5. 5 Pour the tomato sauce over the vegetable linguine and mix well. Heat the mixture on low heat.
  6. 6 Serve the vegetable linguine with a grilled chicken breast on top and sprinkle with fresh basil. Buon appetito!
