  • cups quinoa
  • red bell pepper
  • yellow bell pepper
  • eggplant
  •  Olive oil
  •  Salt and pepper to taste
  •  Juice of 1 lemon
  •  Fresh parsley for garnish

Instructions

  3. 3 Bring the quinoa to a boil with 4 cups of water. Reduce the heat and let it simmer until the quinoa is cooked (about 15 minutes).
