2 large zucchinis
1 large onion
2 cloves of garlic
1 liter vegetable broth
Juice and zest of 1 lemon
50 grams grated Pecorino
Salt and pepper to taste
2 tablespoons olive oil

Instructions
1Cut the zucchinis, onion, and garlic into pieces.
2Heat the olive oil in a large pan and sauté the onion and garlic until translucent.
3Add the zucchinis and sauté for 5 minutes.
4Add the vegetable broth and bring the soup to a boil. Let it simmer for 15 minutes.
5Puree the soup with an immersion blender until smooth.
6Add the lemon juice, lemon zest, and grated Pecorino. Stir well and season with salt and pepper.
