Italian Zucchini Soup with Lemon and Pecorino

Ingredients

  • large zucchinis
  • large onion
  • cloves of garlic
  • liter vegetable broth
  •  Juice and zest of 1 lemon
  • 50 grams grated Pecorino
  •  Salt and pepper to taste
  • tablespoons olive oil

Instructions

  1. 1 Cut the zucchinis, onion, and garlic into pieces.
  2. 2 Heat the olive oil in a large pan and sauté the onion and garlic until translucent.
  3. 3 Add the zucchinis and sauté for 5 minutes.
  4. 4 Add the vegetable broth and bring the soup to a boil. Let it simmer for 15 minutes.
  5. 5 Puree the soup with an immersion blender until smooth.
  6. 6 Add the lemon juice, lemon zest, and grated Pecorino. Stir well and season with salt and pepper.
  7. 7 Serve the soup hot and garnish with some extra grated Pecorino. Enjoy!
