Lemon Garlic Shrimp Sauce with Whole Wheat Penne

This delicious and healthy lemon garlic shrimp sauce with whole wheat penne is perfect for a weeknight dinner. Ingredients

  • 400 grams whole wheat penne
  • 500 grams shrimp, peeled and cleaned
  • cloves of garlic, finely chopped
  • lemon, juiced
  • tablespoons olive oil
  •  salt and pepper to taste
  •  fresh parsley for garnish

Instructions

  1. 1 Cook the pasta according to the instructions on the package.
  2. 2 Meanwhile, heat 2 tablespoons of olive oil in a pan and add the shrimp. Cook them on both sides until they are nicely pink. Remove them from the pan and set aside.
  3. 3 In the same pan, add another 2 tablespoons of olive oil and sauté the garlic until fragrant.
  4. 4 Add the lemon juice and let it simmer. Season with salt and pepper to taste.
  5. 5 Add the shrimp back to the pan and mix well with the sauce.
  6. 6 Drain the pasta and add it to the pan as well. Stir everything together so the pasta is coated with the sauce.
