Spicy Shrimp Skewers with Lemon Garlic Sauce

Ingredients

  • 500 g fresh shrimp, peeled and deveined
  • red peppers, finely chopped
  • cloves of garlic, finely chopped
  • lemon, juiced
  • tablespoons olive oil
  • 200 g Greek yogurt
  •  Bunch of fresh parsley, finely chopped
  •  Salt and pepper to taste

Instructions

  1. 1 In a bowl, mix the shrimp, finely chopped red peppers, half of the garlic, the juice of half a lemon, and a tablespoon of olive oil. Cover and let marinate in the refrigerator for 30 minutes.
  2. 2 While the shrimp marinate, make the lemon garlic sauce. Mix the Greek yogurt, the remaining garlic, the juice of the remaining half lemon, and a tablespoon of olive oil. Season with salt and pepper.
  3. 3 Thread the shrimp onto skewers and grill on the barbecue or in a grill pan over medium-high heat. Turn after 3-4 minutes and grill for another 3-4 minutes on the other side.
