500 g fresh shrimp, peeled and deveined
2 red peppers, finely chopped
4 cloves of garlic, finely chopped
1 lemon, juiced
2 tablespoons olive oil
200 g Greek yogurt
Bunch of fresh parsley, finely chopped

Instructions
1In a bowl, mix the shrimp, finely chopped red peppers, half of the garlic, the juice of half a lemon, and a tablespoon of olive oil. Cover and let marinate in the refrigerator for 30 minutes.
2While the shrimp marinate, make the lemon garlic sauce. Mix the Greek yogurt, the remaining garlic, the juice of the remaining half lemon, and a tablespoon of olive oil. Season with salt and pepper.
3Thread the shrimp onto skewers and grill on the barbecue or in a grill pan over medium-high heat. Turn after 3-4 minutes and grill for another 3-4 minutes on the other side.
4Serve the shrimp skewers warm, drizzled with the lemon garlic sauce and sprinkled with the finely chopped parsley. Enjoy!
