Ingredients

  • low carb buns
  • eggs
  • avocados
  •  Salt and pepper to taste
  •  Handful of finely chopped parsley (optional)

Instructions

  1. 1 Cut the avocados in half, remove the pit, and scoop out the flesh. Mash the flesh with a fork and season with salt and pepper.
  2. 2 Hard boil the eggs for about 10 minutes. Shock them in cold water, peel them, and slice them.
  3. 3 Slice the buns in half and spread the mashed avocado on the bottom halves.
  4. 4 Top the avocado with egg slices and sprinkle with extra salt, pepper, and optionally the chopped parsley.
