Low Carb Egg and Avocado Sandwich
For a delicious and nutritious lunch, try this low carb egg and avocado sandwich. It is easy to prepare and packed with healthy fats and proteins.
Ingredients

4 low carb buns

4 eggs

2 avocados

Salt and pepper to taste

Handful of finely chopped parsley (optional)

Cut the avocados in half, remove the pit, and scoop out the flesh. Mash the flesh with a fork and season with salt and pepper.

Hard boil the eggs for about 10 minutes. Shock them in cold water, peel them, and slice them.

Slice the buns in half and spread the mashed avocado on the bottom halves.

Top the avocado with egg slices and sprinkle with extra salt, pepper, and optionally the chopped parsley.
