Poached Chicken with Homemade Tarragon Mustard Sauce

Ingredients
4 chicken breasts
1 onion, chopped
2 cloves of garlic, minced
2 tbsp olive oil
500 ml chicken broth
2 tbsp Dijon mustard
1 bunch of fresh tarragon, chopped
100 ml cream
salt and pepper to taste

Instructions
1Heat the olive oil in a large pan over medium heat. Add the onion and garlic and cook until soft.
2Add the chicken breasts to the pan and brown on all sides.
3Pour the chicken broth over the chicken breasts and bring to a boil. Reduce the heat and let the chicken poach gently for 15-20 minutes.
4Remove the chicken from the pan and keep warm. Add the mustard, tarragon, and cream to the broth in the pan and stir well.
5Let the sauce simmer gently for another 5 minutes until slightly thickened. Season with salt and pepper.
6Pour the sauce over the poached chicken breasts and serve immediately. Enjoy!
