200 g fresh spinach
100 g feta, crumbled
2 spring onions, finely chopped
1 clove of garlic, minced
Salt and pepper to taste

Instructions
1Whisk the eggs in a bowl and add a pinch of salt and pepper.
2Heat a tablespoon of olive oil in a frying pan over medium-high heat.
3Add the garlic and spring onions. Cook for about 2 minutes, until softened.
4Add the spinach and cook until wilted, usually about 2-3 minutes.
5Divide the spinach mixture onto four plates and set aside.
6Wipe the pan clean and heat the remaining olive oil over medium-high heat.
