Ingredients

  • large eggs
  • 200 g fresh spinach
  • 100 g feta, crumbled
  • spring onions, finely chopped
  • clove of garlic, minced
  •  Salt and pepper to taste
  • tablespoons of olive oil

Instructions

  1. 1 Whisk the eggs in a bowl and add a pinch of salt and pepper.
  2. 2 Heat a tablespoon of olive oil in a frying pan over medium-high heat.
  3. 3 Add the garlic and spring onions. Cook for about 2 minutes, until softened.
  4. 4 Add the spinach and cook until wilted, usually about 2-3 minutes.
  5. 5 Divide the spinach mixture onto four plates and set aside.
  6. 6 Wipe the pan clean and heat the remaining olive oil over medium-high heat.
  7. 7 Pour a quarter of the egg mixture into the pan and cook until the bottom is set, usually about 2 minutes.
  8. 8 Divide a quarter of the spinach mixture and feta over half of the omelette and fold the other half over.
