Quark Cake with Red Fruit and Granola

Ingredients

  • liter low-fat quark
  • 250 grams frozen red fruit (raspberries, strawberries, berries)
  • 200 grams granola
  • tablespoons honey
  • teaspoon vanilla extract
  • 10 sheets gelatin

Instructions

  1. 1 Soak the gelatin sheets in a bowl of cold water and let them sit for about 10 minutes.
  2. 2 Heat the frozen fruit with two tablespoons of honey in a saucepan over low heat. Stir until the fruit is soft and the juice has been released.
  3. 3 Squeeze out the gelatin sheets and add them to the warm fruit. Stir well until the gelatin is dissolved.
  4. 4 In a large bowl, mix the quark, the fruit mixture, the remaining honey, and vanilla extract together.
  5. 5 Divide the granola into four glasses and spoon the quark mixture on top.
  6. 6 Place the glasses in the refrigerator and let them set for at least 2 hours.
  7. 7 Serve the quark cakes cold and garnish with some extra fruit and granola if desired. Enjoy!
