Ingredients

  • 400 ml full-fat coconut milk
  •  Juice and zest of 2 limes
  • tablespoons honey
  • gelatin leaves
  • vanilla bean
  •  Coconut flakes for garnish

Instructions

  1. 1 Soak the gelatin leaves in cold water.
  2. 2 Heat the coconut milk in a pan over medium heat, but do not let it boil.
  3. 3 Cut the vanilla bean lengthwise and scrape out the seeds. Add these along with the honey to the coconut milk.
  4. 4 Squeeze the water out of the gelatin leaves and add them to the warm coconut milk. Stir well until fully dissolved.
  5. 5 Now add the lime juice and zest and mix everything well.
  6. 6 Divide the mousse into 4 dessert glasses and let it set in the refrigerator for at least 2 hours.
  7. 7 Garnish with coconut flakes before serving. Enjoy!
