400 ml full-fat coconut milk
Juice and zest of 2 limes
3 tablespoons honey
4 gelatin leaves
1 vanilla bean
Coconut flakes for garnish

Instructions
1Soak the gelatin leaves in cold water.
2Heat the coconut milk in a pan over medium heat, but do not let it boil.
3Cut the vanilla bean lengthwise and scrape out the seeds. Add these along with the honey to the coconut milk.
4Squeeze the water out of the gelatin leaves and add them to the warm coconut milk. Stir well until fully dissolved.
5Now add the lime juice and zest and mix everything well.
6Divide the mousse into 4 dessert glasses and let it set in the refrigerator for at least 2 hours.
7Garnish with coconut flakes before serving. Enjoy!
