400 g fresh raspberries
3 tablespoons sugar
2 teaspoons gelatin powder
2 tablespoons water
200 ml whipping cream
2 tablespoons powdered sugar
Fresh mint leaves for decoration

Instructions
1Puree the raspberries and strain to remove the seeds.
2Mix the gelatin powder with the water in a small saucepan and let it sit for 5 minutes to swell.
3Heat the gelatin mixture over low heat until fully dissolved. Then mix this with the raspberry puree.
4Whip the cream with the powdered sugar until soft peaks form.
5Gently fold the whipped cream into the raspberry mixture.
6Divide the mousse among 4 dessert glasses and let it set in the refrigerator for at least 2 hours.
7Garnish with fresh mint leaves before serving. Enjoy!
