Refreshing Raspberry Mousse with Fresh Mint

Ingredients

  • 400 g fresh raspberries
  • tablespoons sugar
  • teaspoons gelatin powder
  • tablespoons water
  • 200 ml whipping cream
  • tablespoons powdered sugar
  •  Fresh mint leaves for decoration

Instructions

  1. 1 Puree the raspberries and strain to remove the seeds.
  2. 2 Mix the gelatin powder with the water in a small saucepan and let it sit for 5 minutes to swell.
  3. 3 Heat the gelatin mixture over low heat until fully dissolved. Then mix this with the raspberry puree.
  4. 4 Whip the cream with the powdered sugar until soft peaks form.
  5. 5 Gently fold the whipped cream into the raspberry mixture.
  6. 6 Divide the mousse among 4 dessert glasses and let it set in the refrigerator for at least 2 hours.
  7. 7 Garnish with fresh mint leaves before serving. Enjoy!
