2 cloves of garlic
3 lemons
1 red onion
2 tomatoes
1 bunch of fresh parsley
400 g couscous

Instructions
1Preheat the oven to 180 degrees.
2Dice the tomatoes and onion, and finely chop the garlic and parsley.
3Place the salmon fillets in an oven dish and spread the tomatoes, onion, garlic, and half of the parsley over them. Grate the zest of a lemon over them, drizzle with olive oil, and season with salt and pepper. Bake the salmon for 20-25 minutes in the oven.
4Prepare the couscous according to the instructions on the package. Add the juice of 2 lemons, a dash of olive oil, the remaining parsley, and some garlic. Mix well and season with salt and pepper.
