  • lemons
  • red onion
  • tomatoes
  • bunch of fresh parsley
  • 400 g couscous
  •  Olive oil
  •  Salt and pepper

Instructions

  1. 1 Preheat the oven to 180 degrees.
  2. 2 Dice the tomatoes and onion, and finely chop the garlic and parsley.
  3. 3 Place the salmon fillets in an oven dish and spread the tomatoes, onion, garlic, and half of the parsley over them. Grate the zest of a lemon over them, drizzle with olive oil, and season with salt and pepper. Bake the salmon for 20-25 minutes in the oven.
