Spicy Chickpea Salad for Lunch
This spicy chickpea salad is the perfect dish for a healthy and filling lunch. It is quick to prepare and packed with proteins and fibers!
Ingredients

2 cans of chickpeas

1 red bell pepper

1 red onion

2 cloves of garlic

1 red chili pepper

2 tablespoons of olive oil

1 teaspoon of cumin

1 teaspoon of paprika powder

salt to taste

pepper to taste

handful of fresh coriander

juice of 1 lime
Instructions

Drain the chickpeas and rinse them under cold water.

Finely chop the bell pepper, onion, garlic, and red chili pepper.

Heat the olive oil in a pan and add the garlic and red chili pepper.

After a minute, add the onion, bell pepper, and chickpeas. Cook for about 10 minutes over medium heat.

Add the cumin, paprika powder, salt, and pepper and stir well.
