2 large sweet potatoes
2 cans of chickpeas (400g each)
2 red onions
3 cloves of garlic
1 red chili pepper
4 tomatoes
200 g feta cheese
2 teaspoons smoked paprika
1 teaspoon cumin
4 tablespoons olive oil
Fresh coriander (optional)
Salt and pepper to taste

Instructions
1Preheat the oven to 200 degrees.
2Cut the sweet potatoes into cubes and place them on a baking sheet. Drizzle with 2 tablespoons of olive oil, salt, and pepper. Roast in the oven for 25 minutes.
3Meanwhile, chop the onions, garlic, red chili pepper, and tomatoes.
4Heat the remaining olive oil in a large pan and add the onions, garlic, and red chili pepper. Cook until the onions are translucent.
5Add the chickpeas, tomatoes, smoked paprika, and cumin. Let it simmer for 10 minutes.
6Remove the sweet potatoes from the oven and add them to the pan. Stir everything together and let it simmer for another 5 minutes.
