  • large sweet potatoes
  • cans of chickpeas (400g each)
  • red onions
  • cloves of garlic
  • red chili pepper
  • tomatoes
  • 200 g feta cheese
  • teaspoons smoked paprika
  • teaspoon cumin
  • tablespoons olive oil
  •  Fresh coriander (optional)
  •  Salt and pepper to taste

Instructions

  1. 1 Preheat the oven to 200 degrees.
  2. 2 Cut the sweet potatoes into cubes and place them on a baking sheet. Drizzle with 2 tablespoons of olive oil, salt, and pepper. Roast in the oven for 25 minutes.
  3. 3 Meanwhile, chop the onions, garlic, red chili pepper, and tomatoes.
  4. 4 Heat the remaining olive oil in a large pan and add the onions, garlic, and red chili pepper. Cook until the onions are translucent.
  5. 5 Add the chickpeas, tomatoes, smoked paprika, and cumin. Let it simmer for 10 minutes.
