4 large sweet potatoes
2 red onions
4 cloves of garlic
2 red chili peppers
1 liter vegetable broth
400 ml coconut milk
a bunch of fresh coriander
salt and pepper to taste

Instructions
1Cut the sweet potatoes, onions, garlic, and chili peppers into pieces.
2Heat some olive oil in a large pan and sauté the onions, garlic, and chili peppers until soft.
3Add the sweet potatoes and sauté for a few minutes.
4Add the vegetable broth and coconut milk. Bring to a boil and let it simmer for about 20 minutes, until the sweet potatoes are soft.
5Puree the soup with an immersion blender until smooth.
