4 large bell peppers (a mix of colors)
200 grams quinoa
1 can black beans, rinsed and drained
200 grams corn
1 small red onion, finely chopped
2 cloves garlic, minced
1 teaspoon cumin
1 teaspoon paprika powder
Salt and pepper to taste
200 grams grated cheese
Fresh cilantro for garnish

Instructions
1Preheat the oven to 180 degrees Celsius.
2Cut the tops off the peppers and remove the seeds.
3Cook the quinoa according to package instructions.
4Heat a little oil in a large pan and sauté the onion and garlic until soft.
5Add the cooked quinoa, black beans, corn, cumin, paprika powder, salt, and pepper to the pan and stir well.
6Fill the peppers with the quinoa mixture and place them in a baking dish.
7Sprinkle the grated cheese over the stuffed peppers.
