Ingredients

  • large bell peppers (a mix of colors)
  • 200 grams quinoa
  • can black beans, rinsed and drained
  • 200 grams corn
  • small red onion, finely chopped
  • cloves garlic, minced
  • teaspoon cumin
  • teaspoon paprika powder
  •  Salt and pepper to taste
  • 200 grams grated cheese
  •  Fresh cilantro for garnish

Instructions

  1. 1 Preheat the oven to 180 degrees Celsius.
  2. 2 Cut the tops off the peppers and remove the seeds.
  3. 3 Cook the quinoa according to package instructions.
  4. 4 Heat a little oil in a large pan and sauté the onion and garlic until soft.
  5. 5 Add the cooked quinoa, black beans, corn, cumin, paprika powder, salt, and pepper to the pan and stir well.
  6. 6 Fill the peppers with the quinoa mixture and place them in a baking dish.
