2 medium sweet potatoes
1 cup quinoa
1 can black beans
1 red bell pepper
1 large onion
3 cloves of garlic
2 tablespoons olive oil
2 teaspoons cumin
1 teaspoon chili powder
1 can diced tomatoes
Fresh cilantro for garnish
Salt and pepper to taste

Instructions
1Peel and dice the sweet potatoes.
2Heat the olive oil in a large pan and sauté the onion and garlic.
3Add the sweet potato and bell pepper and sauté for 5 minutes.
4Rinse the quinoa under cold water and add it to the pan.
5Add the diced tomatoes, black beans, cumin, and chili powder and stir well. Season with salt and pepper.
