Ingredients

  • medium sweet potatoes
  • cup quinoa
  • can black beans
  • red bell pepper
  • large onion
  • cloves of garlic
  • tablespoons olive oil
  • teaspoons cumin
  • teaspoon chili powder
  • can diced tomatoes
  •  Fresh cilantro for garnish
  •  Salt and pepper to taste

Instructions

  1. 1 Peel and dice the sweet potatoes.
  2. 2 Heat the olive oil in a large pan and sauté the onion and garlic.
  3. 3 Add the sweet potato and bell pepper and sauté for 5 minutes.
  4. 4 Rinse the quinoa under cold water and add it to the pan.
  5. 5 Add the diced tomatoes, black beans, cumin, and chili powder and stir well. Season with salt and pepper.
