Ingredients

  • can chickpeas (drained and rinsed)
  • large onion, finely chopped
  • cloves of garlic, finely chopped
  • tablespoons fresh parsley, finely chopped
  • teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  •  salt and pepper to taste
  • -3 tablespoons flour
  •  oil for frying
  • large tortillas
  •  mixed greens
  •  sliced cucumber
  •  sliced tomato
  • 1/2 red onion, finely chopped
  •  Tahini dressing (3 tablespoons tahini, 1 tablespoon lemon juice, 2 tablespoons water, salt)

Instructions

  1. 1 In a food processor or blender, combine the chickpeas, onion, garlic, parsley, cumin, coriander, salt, and pepper. Blend until smooth.
  2. 2 Add the flour and blend again. The mixture should now be sticky enough to form falafel balls. If it's too wet, add more flour.
  3. 3 With wet hands, form falafel balls from the mixture.
  4. 4 Heat some oil in a pan and fry the falafel balls until golden brown and crispy.
  5. 5 While the falafel is cooking, prepare the tahini dressing. Mix tahini, lemon juice, water, and salt in a small bowl.
  6. 6 Divide the greens, cucumber, tomato, and red onion among the tortillas. Add the falafel balls and drizzle with the tahini dressing.
