Ingredients

  • large red bell peppers
  • cup green lentils
  • 200 grams feta cheese, crumbled
  • onion, finely chopped
  • cloves of garlic, minced
  • tablespoons olive oil
  • teaspoon paprika powder
  •  Salt and pepper to taste
  •  Fresh parsley for garnish

Instructions

  1. 1 Preheat the oven to 200 degrees Celsius.
  2. 2 Cook the lentils according to the package instructions.
  3. 3 Cut the tops off the peppers and remove the seeds.
  4. 4 Heat the olive oil in a pan and sauté the onion and garlic until translucent.
  5. 5 Add the cooked lentils, paprika powder, salt, pepper, and half of the feta. Stir well.
  6. 6 Fill the peppers with the lentil mixture and place them in a baking dish.
  7. 7 Sprinkle the stuffed peppers with the remaining feta and bake for about 20 minutes in the oven, or until the peppers are tender.
