Ingredients

  • red bell peppers
  • 200 grams quinoa
  • onion, finely chopped
  • cloves of garlic, finely chopped
  • can of chopped tomatoes (400 grams)
  • teaspoon oregano
  • teaspoon basil
  • teaspoon thyme
  •  salt and pepper to taste
  •  olive oil

Instructions

  1. 1 Preheat the oven to 180 degrees Celsius and grease a baking dish with a little olive oil.
  2. 2 Cook the quinoa according to the instructions on the package and set aside.
  3. 3 Cut the tops off the peppers, remove the seeds, and place them in the baking dish.
  4. 4 Heat some olive oil in a pan and sauté the onion and garlic until soft.
  5. 5 Add the chopped tomatoes and herbs, and let the sauce simmer for 15-20 minutes until it thickens.
