4 red bell peppers
200 grams quinoa
1 onion, finely chopped
2 cloves of garlic, finely chopped
1 can of chopped tomatoes (400 grams)
1 teaspoon oregano
1 teaspoon basil
1 teaspoon thyme
salt and pepper to taste

Instructions
1Preheat the oven to 180 degrees Celsius and grease a baking dish with a little olive oil.
2Cook the quinoa according to the instructions on the package and set aside.
3Cut the tops off the peppers, remove the seeds, and place them in the baking dish.
4Heat some olive oil in a pan and sauté the onion and garlic until soft.
5Add the chopped tomatoes and herbs, and let the sauce simmer for 15-20 minutes until it thickens.
6Add the quinoa to the sauce and mix well. Season with salt and pepper to taste.
7Fill the peppers with the quinoa-tomato mixture and bake for 25-30 minutes in the oven until the peppers are soft.
