Vegetarian Lentil Curry with Naan Bread

Ingredients

  • onions, finely chopped
  • cloves of garlic, crushed
  • tablespoon grated fresh ginger
  • tablespoons curry powder
  • can of lentils (400g), rinsed and drained
  • can of diced tomatoes (400g)
  • 400 ml coconut milk
  •  Handful of fresh cilantro, finely chopped
  • naan breads
  • tablespoons olive oil
  •  Salt and pepper to taste

Instructions

  1. 1 Heat the olive oil in a large pan over medium-high heat. Add the onion, garlic, and ginger and cook until the onion is soft.
  2. 2 Add the curry powder and cook for another minute, making sure the spices do not burn.
  3. 3 Add the lentils, diced tomatoes, and coconut milk. Bring to a boil, reduce heat and let simmer for 20 minutes.
  4. 4 Taste and add salt and pepper to taste. Add the fresh cilantro just before serving.
  5. 5 Warm the naan breads according to the instructions on the package and serve with the curry.
