Vegetarian Quinoa Salad with Avocado and Feta
A fresh and nutritious salad, perfect for a light lunch or dinner. The combination of quinoa, avocado, and feta provides a richness of flavors and textures. And don't worry, this salad is super easy to make!

200 grams quinoa

2 ripe avocados

200 grams feta cheese

1 red onion, finely chopped

2 tomatoes, diced

Juice of 1 lemon

Handful of fresh basil, finely chopped

Salt and pepper to taste

Cook the quinoa according to the instructions on the package.

Meanwhile, cut the avocados in half, remove the pit, and dice the flesh.

Dice the feta as well.

In a large bowl, combine the cooked quinoa, avocado, feta, red onion, and tomatoes.
