Italian Minestrone Soup with Fresh Herbs

2 carrots, diced

2 stalks of celery, sliced

1 zucchini, diced

1 red bell pepper, diced

400 grams canned diced tomatoes

1 liter vegetable broth

400 grams kidney beans, rinsed and drained

100 grams whole wheat pasta

Handful of fresh basil, chopped

Handful of fresh parsley, chopped

Heat the olive oil in a large pan over medium heat.

Add the onion and garlic and cook for 5 minutes, or until soft.

Add the carrots, celery, zucchini, and bell pepper and cook for another 5 minutes, stirring occasionally.
