2 medium sweet potatoes
1 large beetroot
1 large carrot
2 tablespoons olive oil
Sea salt to taste
Herbs to taste (e.g. rosemary, thyme, garlic powder)

Instructions
1Preheat your oven to 175 degrees Celsius.
2Wash and dry your vegetables well. No stress, you don't have to peel them!
3Slice the vegetables as thinly as possible. A mandoline is perfect for this, but a sharp knife will also do.
4Arrange the vegetables on a baking sheet lined with parchment paper, making sure they don't overlap.
5Brush the vegetables with a little olive oil, sprinkle with sea salt and your favorite herbs.
6Bake the chips in the oven for about 20-25 minutes, or until crispy and lightly golden brown. Keep an eye on them to prevent burning!
7Let the chips cool before serving, they will become even crispier as they cool.
