400 g raw prawns, peeled
2 cloves of garlic, finely chopped
2 spring onions, sliced
1 red chili pepper, finely chopped
1 bok choy, washed and cut into pieces
1 liter vegetable broth
2 tablespoons soy sauce
1 tablespoon sesame oil
Handful of fresh coriander, roughly chopped

Instructions
1Prepare the whole wheat noodles according to the package instructions and set aside.
2Heat the sesame oil in a large pan over medium-high heat. Add the garlic, spring onions, and red chili pepper and cook until soft.
3Add the prawns and cook until they turn pink and are cooked through. Don't worry if you've never cooked prawns before - you'll know they're ready when they change from grey to pink!
4Add the vegetable broth and soy sauce. Bring to a boil.
5Add the bok choy and the pre-cooked noodles. Let the soup simmer for a few more minutes so everyone can get to know each other well in the pot.
