Bulgur Salad with Grilled Halloumi and Olives

Ingredients

  • 200 grams bulgur
  • blocks halloumi, sliced
  • red onion, finely chopped
  • tomatoes, diced
  • cucumber, diced
  • 100 grams black olives
  •  a handful of fresh mint, finely chopped
  •  juice of 1 lemon
  • tablespoons olive oil
  •  salt and pepper to taste

Instructions

  1. 1 Cook the bulgur according to the package instructions and let it cool.
  2. 2 Heat a grill pan and grill the halloumi slices on both sides until golden brown.
  3. 3 Combine the bulgur, red onion, tomatoes, cucumber, olives, and mint in a large bowl.
  4. 4 Add the lemon juice, olive oil, salt, and pepper and mix well.
  5. 5 Finally, add the grilled halloumi and serve the salad. Enjoy!
