Instructions

  1. 1 Cook the quinoa according to the instructions on the package.
  2. 2 Trim the woody ends of the asparagus and blanch them for 3 minutes in boiling water. Rinse them under cold water and set aside.
  3. 3 Place the salmon fillets in a steamer basket above a pot of boiling water. Steam the salmon for 10-12 minutes until cooked through.
  4. 4 Meanwhile, zest one lemon and juice both lemons. Mix the lemon juice, zest, olive oil, and chopped dill to make the citrus-dill sauce.
  5. 5 Serve the steamed salmon on a bed of quinoa, with the asparagus on the side. Drizzle the sauce over and season with salt and pepper.
