200 g quinoa
4 salmon fillets
1 cucumber
2 ripe tomatoes
1 red onion
Handful of fresh basil
Handful of fresh parsley
2 lemons
4 tablespoons of olive oil
Sea salt and freshly ground black pepper

Instructions
1Cook the quinoa according to the instructions on the package. Let it cool down.
2Preheat the oven to 180 degrees Celsius. Place the salmon fillets on a baking sheet, drizzle with some olive oil, salt, and pepper. Bake for 15-20 minutes until cooked.
3Meanwhile, dice the cucumber, tomatoes, and red onion into small cubes.
4Finely chop the basil and parsley.
5In a large bowl, mix the cooked quinoa, diced vegetables, chopped herbs, lemon juice, and olive oil. Season with salt and pepper.
