  • medium sweet potatoes
  • handfuls of mixed greens

  • tablespoons of olive oil

Instructions

  1. 1 Preheat the oven to 200 degrees.
  2. 2 Dice the sweet potatoes and place them on a baking sheet. Drizzle with 2 tablespoons of olive oil, salt, and pepper. Roast in the oven for about 20-25 minutes, or until tender and golden brown.
  3. 3 While the sweet potatoes are roasting, rub the salmon fillets with 1 tablespoon of olive oil, the juice of 1 lemon, salt, and pepper. Let it sit for a while.
