Ingredients
400 grams large raw shrimp, peeled and cleaned
Juice and zest of 1 orange
Juice and zest of 1 lemon
2 cloves of garlic, minced
1 red chili pepper, finely chopped
1 teaspoon paprika powder
300 grams basmati rice
1 sachet of saffron threads
1 vegetable bouillon cube
Olive oil
Salt and pepper
Fresh parsley, finely chopped

Instructions
1In a bowl, mix the shrimp with the orange and lemon zest and juice, garlic, red chili pepper, and paprika powder. Let it marinate for at least 30 minutes.
2Put the rice in a pan and add water until the rice is about 2 cm below water level. Add the saffron threads and bouillon cube. Reduce the heat and let the rice cook for about 20 minutes.
3Meanwhile, heat some olive oil in a skillet. Add the marinated shrimp and cook for about 4 minutes until done. Season with salt and pepper.
4Serve the shrimp on a bed of saffron rice, garnish with the finely chopped parsley. Bon appétit!
