Ingredients

  • 400 grams large raw shrimp, peeled and cleaned
  •  Juice and zest of 1 orange
  •  Juice and zest of 1 lemon
  • cloves of garlic, minced
  • red chili pepper, finely chopped
  • teaspoon paprika powder
  • 300 grams basmati rice
  • sachet of saffron threads
  • vegetable bouillon cube
  •  Olive oil
  •  Salt and pepper
  •  Fresh parsley, finely chopped

Instructions

  1. 1 In a bowl, mix the shrimp with the orange and lemon zest and juice, garlic, red chili pepper, and paprika powder. Let it marinate for at least 30 minutes.
  2. 2 Put the rice in a pan and add water until the rice is about 2 cm below water level. Add the saffron threads and bouillon cube. Reduce the heat and let the rice cook for about 20 minutes.
  3. 3 Meanwhile, heat some olive oil in a skillet. Add the marinated shrimp and cook for about 4 minutes until done. Season with salt and pepper.
  4. 4 Serve the shrimp on a bed of saffron rice, garnish with the finely chopped parsley. Bon appétit!
