Ingredients

  • 200 grams quinoa
  • chicken breasts
  • cloves of garlic
  • zucchini
  • red bell pepper
  • yellow bell pepper
  • handfuls of fresh basil
  • 100 grams cherry tomatoes
  • tablespoons olive oil
  • tablespoons balsamic vinegar
  •  Salt and pepper to taste

Instructions

  1. 1 Cook the quinoa according to the instructions on the package.
  2. 2 Meanwhile, cut the chicken breasts into cubes and fry them in a pan with 1 tablespoon of olive oil and the pressed garlic until they are nicely golden brown.
  3. 3 Cut the zucchini and bell peppers into cubes and add them to the pan. Cook for another 5-7 minutes.
  4. 4 In a small bowl, make the dressing by mixing the remaining olive oil with the balsamic vinegar. Add salt and pepper to taste.
